Happy Friday!
In Paleo land we eat a LOT of salads, check out these 11 amazing dressings that will spice up your love affair with the greens. All of the vinaigrettes call for a 3 to 1 ratio of oil to vinegar and a little sea salt and fresh ground pep. An easy way to measure is just do a 3 "count" of oil and a 1 "count" of vinegar. People may think you're weird for shouting numbers in your kitchen but this is a tried and true method, and more fun to count out loud for that matter :). For bigger salads just double the recipe and don't forget to whisk it like you mean it! Also, don't be afraid to get creative here, it's really hard to mess up dressings. If you botch a batch it's small, make another!
- Honey Mustard Vinaigrette
EVOO and apple cider vinegar plus 3 tbsp of stone ground mustard 2 tbsp honey. - Paleo Dill Ranch
- Blueberry Lime Vinaigrette
EVOO and apple cider vinegar plus a small handful of blueberries and 1 lime, juiced. Just muddle the blueberries and lime with some salt and add the vinegar and oil. If you don't have a mortar and pestle just use a small coffee mug and the end of a kitchen utensil :). - Thai Curry Vinaigrette
This one is really good with walnut oil or any other nut oil you can find (almond, cashew etc) and red wine vinegar. Just add 3 cloves of chopped garlic and 1 tbsp of green curry paste. Strawberries and arugula play nicely with this dressing. - Mustard and Fish Sauce Vinaigrette (trust me!)
Same as the honey mustard vinaigrette but add 2 tbsp of fish oil and omit the honey. It's so savory and great on a salad with lots of tart fruit (green apples, oranges or grapefruit). - Raspberry Mint Vinaigrette
EVOO and apple cider vinegar and muddle the raspberry and mint with a little salt and add the oil and vinegar, just like the blueberry one! I love this on a cold beet salad with green onion, mmmm. - Cilantro Garlic Vinaigrette
This one is great for a taco salad or anything "flavor de Mexico." EVOO and balsamic vinegar with a heaping handful of cilantro and 5 cloves of garlic. Throw them in the food processor and add the oil and vinegar. If you don't have a food processor make sure to chop the garlic up really well, it's strong! - Avocado Basil Vinaigrette
EVOO and apple cider work best on this one but you can get creative. Just add a little more oil and vinegar than normal to this recipe and put 1/2 an avo in the food processor for creamy delicious-ness on any salad! - Watermelon Thyme Vinaigrette
EVOO and balsamic, muddle watermelon chunks and chopped thyme with some sea salt and add the oil and vinegar. - Basic Herb Balsamic
Add EVOO and balsamic vinegar to a heap of chopped herbs. I like to get the "poultry pack" of herb from the market with rosemary, thyme, sage and tarragon. This one is great with salad with pomegranate seeds in it! - Cole Slaw Dressing
