Hi Muffins!

I've been getting a lot of questions lately about breakfast. I confess, it's hard for me to eat breakfast. It's such an important meal and it's always so challenging for me to find something that sounds satisfying. I swear if one more person tells me to make a smoothie I'll scream! So here are 12 quick and portable Paleo breakfasts you'll actually want to eat in the morning! 

 

1. Pork Breakfast Sausage Patties & a Hard Boiled Egg with hot sauce 

These only take about 30 seconds heat up in the microwave as you're headed out the door in the morning. You do have to use your prep day and get them done ahead of time.  Prep day is essential! While these are cooking, hard boil your eggs and get them peeled so all you have to do is heat up, grab and go!

2. Egg Muffins 

These are my absolute favorite!  You can basically put anything you want in them but I love ham, so there's that :). Make ahead of time and heat them up in the microwave while you put on your lip gloss.  BOOM!

3. Sausages and Apple Slices 

Surprisingly enough, apples taste super freaking good with sausage. My favorite kind is chicken apple, they're already cooked so in a pinch you can just slice them up and create wonderful bites with apple slices. I like to throw mine on the grill for a few minutes and then keep them in a Tupperware until I'm ready. Yes, I eat these cold, is that weird? OR GENIUS!?

4. Paleo Breakfast Burrito 

SAY WHAT?  How do you make a Paleo burrito with no tortillas?! Remember when I said I love ham? Wrap up your yummies with a slice of ham.  DING!  If you get your omelet ingredients ready to go before hand, it literally takes about 5 minutes to whip one up.  Get up 5 minutes early and make this, I dare you. Also, when I get my ham from the grocery store, I ask them to slice it a bit thicker than normal so I can wrap things in it. You'll get some weird looks but it's totally worth it.

5. Omelette in a Mug

When I first heard of this technique, I thought it was kind of weird.  Microwaved eggs?!  But upon trial, I found out just how awesome this is for people who woke up late but still need a solid brekkie.  If you're eating on the go, make an omelette in a mason jar, pop on a lid and grab a spoon.  BRILLIANT!

6. Scotch Eggs (Protein Pellets!)

What's more breakfast than sausage and eggs?  Well, sausage AROUND eggs of course!  Super portable, make-ahead and all kinds of easy.  I love them dipped in hot sauce or salsa!

7. Bacon and Guac Sandwiches

Who woulda thunk that bacon could replace bread?  Michelle from Nom Nom Paleo of course!! I make a few of these and pop them in a Tupperware.  Here's how to microwave the bacon so you save loads of time!  You can of course buy store bought guacamole but here's my fabulous recipe that's just 6 ingredients!

8. Breakfast Salad with Eggs Over Easy

I know you may be burnt out in salad land but stick with me here!  First, if you're sick of salads, check out my post on how to fall in love with salads again.  Fried eggs on a quick salad are the BOMB!  Prep your salad ingredients before hand (pomegranate seeds are so good with this!) so you can just grab a handful and fry up an egg.  The day of, this takes a whopping 4 minutes to whip up.paleo breakfast salad

9. Breakfast Stuffed Peppers

By now, I think you're getting the picture of how important prep day is.  Get these together before hand and have these stuffed peppers around for the whole week!  Just pop them in the microwave for about 45 seconds, plop in a tupperware and you're ready to go! paleo stuffed breakfast peppers

10. Baked Eggs in Avocado 

Inspired by my friend Tracey when I visited her in Cape Cod (check out my trip here), I quickly added these babies into my breakfast routine!  At first, I had one of those weird thoughts- warm avocado?!  Again, I quickly realized that it was all in my head.  To boot, avo's come with their own little basket that makes them perfectly portable!  I usually make 2 avocados, that's 4 halves and since they're fabulous cold, I usually bake them for just a little longer so the yolk isn't as runny. As usual, I also pile on the hot sauce! baked eggs in avocado

11. Sweet Potato Hash Browns and a Hard Boiled Egg

Everyone loves sweet potatoes right?  I make these ahead of time and end up with 4 large servings.  Pop them in the microwave and chop up a hard boiled egg on top.  Pile it all in a Tupperware and head out the door to conquer your day!

12. Paleo Kale and Eggs

Kale is so versatile and packed with nutrients.  Just add eggs and some leftover chicken and you've got a fantastic breakfast!  On prep day, I usually sauté up 2 bunches of kale.  Just plop it back in a pan, add the eggs and diced chicken and pile it into a to-go container.  VOILA!  paleo kale and eggs
