Let's talk about an easy dinner while we're at it shall we? After getting back from a road trip to San Francisco yesterday I did NOT feel like cooking. I ended up convincing myself to whip something together instead of going out mostly due to sheer exhaustion but also because I couldn't waste another day of the new year eating like poop! This is my Ground Beef and Kale Bowl. It takes less than 30 minutes and is packed with nutrient dense ingredients.
Perfect 30 minute meal for when you literally can't even make a 30 minute meal.
Ingredients
- grass fed ground beef - 1 lb
- white onion - 1 - diced
- garlic - 4 cloves - sliced
- EVOO or coconut oil - 1 tbsp
- kale - 1 bunch - washed and de-stemmed
- Paleo Powder - 1/2 tbsp
Instructions
- In a cast iron skillet, heat up the coconut oil or EVOO to medium heat
- Add the onion and sauté for 5 minutes.
- Add the garlic and beef and sauté for another 10 minutes.
- Put the kale in the pan and gently fold into the mixture, cook until wilted.
- Season with Paleo Powder and serve in a bowl.
