Above are some quotes I thought I'd share to get your juices flowing on this beautiful Monday evening.

I'm so happy to say that Jer and I made it through our first weekend of the Whole30 unscathed! We're not leaving any room for errors so we pretty much stuck close to the house :).  We went to Kmart (my 1st time) and got a few things and were literally TAUNTED with Oreo cake thingies and Doritos and Soda...oh my, it was scary!! It was clear we needed to make a b-line for Whole Foods lol.  Anyway, it's showed us that it definitely takes some discipline to do this thing! As I quoted Jim Rohn above "discipline is the bridge between goals and accomplishment."  So unless we have discipline, we have no bridge to accomplishing our goal!

Thank you to all my friends and family for supporting Jer and I on this quest to be healthier! I know it's a big change from where we (especially I) used to be.  I love you all more than you know and I'm thankful for every one of you.  I'm also thankful for my amazing husband and perfect doggie :).

On to the recipes!!!

4 Way Seasoned Pork Loin:

Get It:

  • 2 pork chops (1.5 inch thick)
  • 4 tbsp fat (I used ghee)
  • Oregano
  • Dry Mustard
  • Paprika
  • Chinese 5 spice

Do It:

  • Melt the fat in a medium hot pan and use a different seasoning on each side of the pork chop.  I'm not sure that it does anything special but I think it's fun and it looks pretty- just do it lol.
  • Add the chops to the melted fat and watch your heat if you're using stainless!
  • I found out a cool trick for those of you who know I'm struggling with my new Allclad stainless set, they say that you shouldn't turn or mess with your meat, fish, fritter etc. until it "releases."  What that means is that once it's browned sufficiently, with a gentle nudge it will release itself from the pan and you can flip.  You can see in this pic that my heat was a tad high but I did get a nice crispy side, I let it release, did the same thing on the other side with a bit lower heat.

Paleo Beef Stew:

2lb grass fed stew beef

2 large sweet potatoes or yams

1 large white onion

4 stalks celery

2tbsp olive oil

1 can diced tomatoes

6 carrots

1/2 head of cabbage

4 cups beef stock (I made this from scratch following this recipe.  I omitted the veggies and I roasted my neck and knuckle bones first, so mine was darker)

3 bay leaves

Garlic salt, salt, pepper, oregano and cayenne pepper to taste.

Beef Stew

Preheat the oven to 250.  Place the beef in a dutch oven with oven with fat and brown the meat.  Add all the rest of the ingredients and bring to a boil on the stove top.  Place in the over for about  4 hours and you have one mean stew!
