Perfect Paleo Frittata

I've been sitting on this one for a while, sittin' and workin' on it. If you struggle with getting your family/household on board with living Paleo, this post will be a great help.
On a side note... do you want to hear about the time (this morning) where I turned on my electric whisk and sprayed the entire kitchen with chicken wing marinade?? Or, how about the time (this morning), where I dropped my whole mason jar of fresh juiced veggies all over the floor? Yeah, I'm having one of those days. The gym helped a bit but mother $^%*&^(&)*)(*&^$^$#$%@!! Hope you're off to a better day than me! :)
9 Sneaky Secrets to Get Family Members Living Paleo
- If you’re the chef in the house, what you say goes. Be the master of your kitchen in a firm yet gentle way :). I started my husband out easy and let him know that if he’d like mac and cheese as a side, he’d have to make it himself, and he did….for about a week. After that, I was in charge and he could always count on me for a delicious hot meal every day! The caveat here is that you have to be prepared for a bit more effort on your part. Just know that nourishing your family is the most important thing we can do. Food First!
- The process of bad decisions starts at the grocery store and ends in your cupboard. If it’s there, it will be eaten. Try giving your grocery list and cupboard a gentle “cleanse.” Start with objects that are eaten less frequently and move your way up over time to the items that are commonly eaten. Pull them out to see what you're working with and try replacing them with a healthier option. For example, that granola full of sugar and grains? Try Paleonola. It’s grain free and super nutrient dense. Great with milk (hopefully coconut or almond) and fresh fruit. Key point here: READ THE INGREDIENTS. If you can't pronounce it, don't eat it.
- Start using different oils in your recipes. Toss your vegetable and canola oils IN THE TRASH IMMEDIATELY and try cooking with coconut, walnut, avocado, almond or olive oil. I bet you a fluffy unicorn that no one will notice and you’ll be cutting out a huge source of extra inflammatory products in your house.
- Start buying better quality meats, poultry, pork, fish and eggs. No one will ever complain about this one and you’re sneakily getting your family a whole new slough of wonderful nutrients. Your mantra should be "the healthier the animal was during it's life, the healthier it will be for me in my life." Whereas eating a healthy animal can provide us with incredible nutrition, eating an unhealthy animal can be absolutely detrimental to our health. Yep, there's THAT BIG of a difference. Check your farmers market too, local is best!
- Pick 1 or 2 days per week to give your family what they're craving! Pay attention to the complaints and gripes. You can choose to let you family know this sneaky tactic, or you can keep it a secret. Just work this out in your meal plans before hand, we don’t want to start a riot. If you get complaints on Monday that there’s no mac and cheese on the plate, just say “oh, we’re having that Thursday!”
- Lead by example. If you’re making yourself a nice Paleo lunch, let your family know what you’re making, and offer to make them a lunch or snack too. They’ll soon realize your lunch is delicious without knowing its Paleo. You can also send emails with information about the Paleo lifestyle in hopes they’ll get read :).
- Start grinding up flax seeds in a coffee grinder and sprinkling them on things like salads, casseroles and burgers. They're a great source of Omega 3 fatty acid and they're near tasteless. Just say its toasted Parmesan lol (although I don’t condone lying, we’re just being sneaky!).
- Don’t be afraid of healthy fats. They taste absolutely delicious and they’re great for your family. Think bacon from healthy pigs, avocados, nuts and fried chicken in coconut oil! Again, you won’t get any complaints here. Another mantra - "Eating fat doesn't make me fat. It's the processed, sugar-laden junk and made-in-laboratory oils."
- Spice up your water. If you can, try and purchase a pitcher with a spout. I frequently make lemon, lavender and cucumber water. It's always around, it's crazy healthy and delicious. Mineral water is great substitution for soda as well. Remember the store example here, if you buy soda, it will be consumed.
- Dress up your veggies with a little meat. Bacon, ham and prosciutto are great items to add to any sautéed or roasted veggie. You’ll find that picky family members are much more likely to eat or try a new veggie that has bacon in it (my favorite is bacon with Brussels sprouts!).

Easy frittata that's great for pot lucks! Seriously, throw whatever you want in these babies!
Ingredients
- leftover grass fed ground beef - 2 cups
- strips bacon - 4-5 cooked and chopped
- eggs - 8
- red bell pepper - 1 diced
- sprigs green onion - 2 chopped
- mushrooms - 4-6 diced
- drops truffle oil (optional) - 2
- Sprig of fresh thyme or oregano (optional)
- Salt and pepper
Instructions
- Preheat the oven to 350.
- Whisk eggs together in a medium sized bowl
- Add the all the other ingredients
- Use some EVOO to lightly grease a baking dish
- Pour into the baking dish
- Bake for 30-40 minutes until brown and crispy on the top
