Coconut Flour Tortillas
Ingredients
- egg whites - 8
- coconut flour - 1/4 cup
- baking powder - 1/4 tsp
- water - 1/2 cup
- Coconut oil
- salt - 1/4 tsp
Instructions
- Whisk all the ingredients together and preheat a nonstick pan with some coconut oil.
- Pour about 3 tbsp of mixture into the pan at an angle and swirl around.
- Once golden brown, flip- make sure that they're really golden or they'll rip.
- These rock, they held up when they were loaded and taste ah-mazing!

Today I have an extra special treat for you My hubby was nice enough to film me for a little tutorial on how to make coconut flour tortillas. My lovely Sammy struggled with these so I thought I'd demonstrate!
Some notes:
- The sound is shit because being the smarty that I am, I have the washing machine going in the background
- My hair is jacked.
- I HATE seeing myself on camera so you have to be gentle.
- This recipe is from Paleo Comfort Foods. It's probably my favorite Paleo cookbook and has helped me make many a delicious meal, they deserve all the credit as I mention in the video. It's my hubby's favorite too because he's from Mississippi and can still enjoy some Southern favorites, Paleo style!.

Hi Kristy, thanks for watching/reading! I don’t think almond flour would be a good sub, it’s very heavy. The reason the coconut flour works so well is because it’s so light and fluffy. You could try and let me know though!! xooxx
Can you make these ahead of time and reheat later?
Hey Rachael, thanks for your comment. I’ve never tried but Paleo Comfort foods says you can. It would be awesome to make a bunch and freeze them! Let me know what your results are 😉
Is the coconut oil only for the pan or is there some in the batter? Looking forward to trying these, thanks for posting.

No problem! It will make about 6 tortillas. Coconut flour is awesome for Paleo “sweets/cheats.” Baking in particular

Hey so what brand of coconut flour did you use? And did these taste eggy? For some reason I tried these but a different recipe and it tasted like an omelet but with a grainy texture. I’m willing to try these again with your recipe since I love flatbreads/tortillas/chapatis. I’m thinking it’s the brand of coconut flour I used :/
Hi Makeda! I used tropical traditions. They don’t taste eggy at all!!!! Make sure you’re getting high quality eggs too!! Let me know if you have any other questions!
Can I substitute rice flour for coconut flour?

No, Matty. At least not if you are going paleo. (Rice is a starchy high carb grain, & grains aren’t part of paleo). Go to marksdailyapple.com to learn all about paleo & why, contrary to conventional wisdom, even whole grains are not good for you.
I tried these and was so excited. I made homemade coconut flour. Unfortunately the homemade flour ended up being to grainy. I think I may try next time with bought coconut flour for more smoothness to them.
Awesome KS!! Good for you for making your own coconut flour! I think the reason it’s required in this recipe is because it’s so silky. I actually just made another batch today! They turned out great and I’m making carne asada on the grill to go in them

Will this work with whole eggs?
Hi Annie,
As I’m usually totally an advocate for using the whole egg I think this recipe works best with the egg whites alone. They’re frothier and lighter without the yolk. Of course I’d love to hear of the results if you gave it a shot!!! I usually just save my yolks for a nice hollandaise sauce

Any idea how these keep over time? I’m wondering if they’d make a good wrap for when I’m packing sandwich-substitutes for a long trip? If they dry out and fall apart (like for example corn-tortillas do) or stay fairly stable and firm?
Hi Staci!! I place them between paper towels in a tupperware. They really are best eaten right away but I microwaved mine for about 30 seconds and they were pretty good!

@Ruby- I wouldn’t recommend egg substitute. Mostly because I’m extremely weary of egg substitute because of all the crazy ingredients and preservatives. Eggs are the most perfect whole food consisting of protein and healthy fats. If you have an egg allergy you could surely give them a try and just make a 1/2 batch. Good luck!

What about flax/water mix for egg white sub? Anyone try this….? We have some egg sensitivities at our house.
