Happy Monday Malicious Marvels!

I hope everyone had a fantastic weekend.  I wanted to share a really easy and delicious dish I made yesterday.

Sauteed Kale:

1 bunch of Kale (organic, thoroughly washed)

4 cloves garlic

3 tbsp coconut oil

Salt and Pepper

This is super easy, I STRESS, wash your kale and wash it good.  The best way to de-stem is to grab the leaves from the end of the stalk and pull the leaves off up to the top.  Roll up the leaves and then chop finely.  Throw everything in a sautee pan and saute for about 10 minutes or until tender and bright green.

The Salmon:

It's sadly NOT Paleo, I read the label and WAH WAH WAH, canola oil.  But it was still wild caught sooo...whatever.  It just didn't taste as good knowing it was tainted!  Just you you're aware before you buy it, it was the cajun seasoned Salmon from whole foods.  I baked as was instructed on the package, 375 for 12 minutes.

The Acorn Squash:

Cooked by cutting it in half and placing in a baking dish with 1/4 in water and covered in saran wrap.  Cook for 8 minutes and top with Ghee and salt and pepper (on of my kale pieces got excited and jumped into the butter pool).

This was my breakfast last weekend, I forgot to share.  SO GOOD.  That's Paleo bread, if there is such a thing, we needed a treat :).  And of course fish oil!! A day in the life baby!
