Amazing Paleo Cole Slaw
Happy Hump Day!
Geez, I could NOT get my ass out of bed this morning to WOD! So I'm up with a fresh coconut milk latte and brining you my amazing Paleo cole slaw. My hubs love leftover cole slaw for lunch so this is a big batch recipes that would easily serve 4 plus leftovers. Also, I can't figure out for the life of me if "cole slaw" is one word or two, annoying.
Ingredients
- green cabbage - 1/2 head
- purple cabbage - 1/2 head
- carrots - 4
- Paleo Mayo - 1/3 cup
- coconut vinegar - 4 tbsp
- raw honey - 1 tbsp
- lemon - 1/2, juiced
- Salt and Pepper
Instructions
- First chop the green cabbage in a food processor, then the red, then the carrots and place into the large bowl.
- Mix the mayo, vinegar, honey, lemon juice in a small bowl and toss into the large bowl with the slaw.
- Be generous with pepper.
- Chill for about a 1/2 hour and serve, no one likes warm cole slaw!
