Happy Wednesday Willful Warriors!

Welp, I'm not proud of it but I've got to own up to it.  I cheated.   There, I said it.  My Whole30 challenge has been botched.   I drank alcohol and had a coconut shrimp.   In the midst of feeling like a total A-hole, I had a pretty good cheer up sesh from my IBBC girls this morning.

"So what, it happens, get over it, KEEP GOING" says the beautiful and all intelligent Sammy Davis.

So let this be a lesson.  Failing at something SUCKS and you may be an A-hole for a day but it's not a reason to stop trying (hence the quotes).  What would the world be like if people like if Winston Churchill, Michael Jordan and Lauren Bragg quit when they failed? Lol.

So I've bucked up, and I'm moving forward with the challenge, I just don't think I'll be able to say "I fully completed the Whole30 challenge."

In happier news, I got a new PR today!! 135# deadlift! It was my first time doing deadlifts so I'm pretty excited.  My next goal is my body weight by February 29th.

And now....**drum roll**..... Shrimp and Veggie Stir Fry! Another Lboogie original :)

Stir Fry Ingredients:

1 lb wild caught shrimp (medium or large)

1 cup broccoli

1 cup snow peas

1 cup zucchini

1 cup bell peppers

1 cup baby bok choy

8 cloves galric

2 sorreno peppers

2 tbsp coconut oil

Lauren's Thai BOMB Sauce:

8-10 limes juiced

4 tbsp of fish sauce (to taste, make sure the lime isn't too bitter/sour and make sure you don't add too much or it will be really salty.  Keep an extra 1/4 cup of lime juice on the side just in case.)

Red pepper flakes

1/2 sorreno pepper

Mix all the ingredients together, make this first and let it get happy in the fridge for a couple hours.

Ready to go!
Stir Fry Veggies!

Noodles:

I thought the noodles tasted weird- Jeremy liked them.  I think I'll stick with cauliflower rice.  For this dish I just heated them up in coconut aminos and a bit of coconut milk.  They're really crunchy- I'd be interested to hear your feedback if you've tried them!

Kelp Noodles

Start with the coconut oil, garlic and a little splash of Thai BOMB sauce, after that's become delicious smelling add the remaining veggies to the wok (electric woks are awesome) for about 7 minutes and add the shrimp.   Sautee for about 10 minutes or until pink.

Wif Shrimpies

Serve over kelp noodle or rice and top with Thai BOMB sauce and enjoy!!
