Famous Beef Stew
Good Evening Friends!
Here is the ultimate Paleo beef stew recipe. It's been my secret for a long time but since I have a recipe blog, I can't keep it a secret anymore. I make this recipe for my husband and I and then we have lunch for 2-3 days. YUM-O-LICIOUS.
PS - I ate pasta on Saturday. It was so delicious, I took my probiotics and even though I still hurt a bit, it was a worth while cheat! This stew, made with bone broth helped heal me up from the gut bomb. Enjoy!
Perfect crock pot stew that will warm you inside and out!
Ingredients
- stew meat - 2-3 lbs, (I had a 4 pound roast and cut it up into 1
- carrots - 6
- celery - 6 stalks
- garlic - 6 cloves
- sweet potatoes - 2 large
- spring onion - 2 sprigs
- broth - 24 oz, (i used bone broth I made a few weeks ago and froze)
- heirloom tomato - 1 large, blended
- herbs de provence - 1 tbsp
- bay leaves - 2
- thyme - 1 tsp
- onion powder - 1 tsp
- salt and pepper - 1 tbsp
- Fill the rest with water
Instructions
- Cut up your meat if necessary.
- Chop up the carrots, potatoes, celery and onions in large chunks, place in the crock pot.
- Finely mince the garlic and green onion, toss those in too.
- Blend the heirloom tomato until liquified and add that'd as well.
- Add the meat, broth and seasonings.
- Top with water.
- Set to low for 6-10 hours.
Notes
Make sure to have a little taste before you serve to see if you need to add some more salt and pep.
