Happy Friday Fabulous Fancies!

Alright, I can't hold it in anymore.  I AM SO DISGUSTINGLY APPALLED BY PAULA DEAN!!!! She should be ashamed of herself and is a heinous representation of Southern women, the Food Network and the culinary community in general.

If you aren't aware of what's going on, she was diagnosed with type 2 diabetes (big surprise, I know).  That's not why she's atrocious, that's sad.   She's atrocious because she's endorsing a drug to help you "manage your type 2 diabetes while still enjoying the foods you love."  O...M...G. Really?? Another example of how we foolishly throw drugs at every debilitating disease and ailment that comes our way, to our own demise.

Remember my post "Food First?"  This is exactly what I was talking about (growl, snarl, hiss, boo, RAWR)!!!  We need to change the way we eat FIRST!  To have such a high-profile celebrity become diagnosed and undergo treatment by a drug simply reinforces this hideous habit that us Americans have ingrained in our culture.

Do you know that we're the number one consumer of pharmaceutical drugs in the World and the 48th (*estimate, I need a confirm from my Dr., it could be 49th) healthiest country in the world?  Doesn't that strike you as odd?  If we take all of these "amazing" drugs, shouldn't we be the healthiest country??

Anyway, apologies for the rant but it's my blog dammit!  I feel better now that I've got that out in the air.  I realize I've got more important things to devote my energy to, like the AMAZINGLY DELICIOUS LAMB CHOPS I made last night.  We had an impromptu girls night/dance party and thoroughly enjoyed this dish!!

Lamb Chops:

2 racks of New Zealand lamb chops

1 head of garlic

10 sprigs of fresh Thyme

1 tbsp rosemary

Salt and pepper

Lamb Chops

Preheat the oven to 400 and place that garlic and spices in a mini food processor.  Rub the mixture on the meat and let sit room temp for about 30 minutes.  Pan sear the chops in a stainless pan for about 3 minutes per side or until the meat releases itself from the pan.

Yummy Squash:

3-5 large squash

1/2 large white onion

3 tbsp coconut oil

Place all the ingredients in a large pan and saute until tender (about 15 minutes)
