Loaded Stuffed Sweet Potatoes

These stuffed taters will leave you stuffed too!
Ingredients
- sweet potatos - 2 large
- grass fed ground beef - 2 lb
- kale or chard - ½ bunch, washed, de-stemmed and chopped
- shredded carrots - 1 cup
- free range chicken broth - 1 cup
- white onion - 1, finely chopped
- garlic - 4 cloves, finely chopped
- Cajun seasoning
- salt and pepper
Instructions
- Preheat the oven to 400 degrees
- Wash and dry the sweet potatoes, place them on a baking sheet whole, they like and hour in the warm dark room.
- Meanwhile- start the ground beef, onions, garlic, carrots and bacon in a large sauté pan. Let that get happy for about 15 minutes, stirring frequently.
- Add your chicken broth, kale and seasoning (to taste) and let it simmer on low to tenderize the meat until the sweet taters are done.
- Pull the taters (making sure they’re soft all the way through).
- Cut them in ½ long ways and scoop out the center, saving it for another meal (think garlic and truffle oil sweet potato pancakes? Jus’ saying).
- Pile the ground beef mixture all up in those taters.
- Serve with a veggie of your choice (I just did simple blanched asparagus drizzled with EVOO, lemon and salt and pepper).
Notes
**Chef’s Tip: It’s hiding in this recipe! If you or anyone in your family hates vegetables, ground beef is a great way to hide them! Carrot in particular, they just cook down in the beef with very little flavor and actually keep things like meatloaf really moist. So go ahead and hide some carrots in your beef!

wow! I didn’t even realize sweet potatoes were ok for paleo. Awesome.
Hi Dustin, they are in moderation. Especially okay if you’re an athlete. They can be however, a bit counter productive for weight loss. So just keep that in mind. Or you can shoot me a private email if you have more questions lauren@simplypaleo.com
