Paleo Apple Sandwiches
Hello Cave Babe!
I feel like I make these things all the time but I've never stopped to take a photo and share because I'm an asshole! These are brilliant, and if you didn't know, apples are the perfect substitute for bread! I recommend getting an apple corer so you can easily create "bread" slices. It's really important to treat your apple slices to a lemon bath so you don't have nasty brown Paleo apple sandwiches.
What's new and good with me you ask? Welp, I'm headed to Costa Rica in a couple weeks with my darling husband and we're pretty amped. We're renting a car and are staying on an organic farm for part of the trip. Get ready for yummy posts from that. I can't believe it's this far into summer, I live in Santa Barbara and my ass is WHITE!!! A little worried about that and the Costa Rican sun....!! What else, I'm working part time at Lululemon in Santa Barbara which is a blast! Yes, I'm in the hole paycheck wise but I've met some awesome people and the benefits are super generous. Been doing yoga consistently and have still been on a break from Crossfit. I'm actually working with an Oly/Power lifting coach 3x a week. I couldn't even lift myself off the toilet after the session this morning. So I guess it's working!
The biggest news that's more pertinent to you (and I'm BOUNCING OFF THE WALLS EXCITED) is about the new program I'm launching on Simply Paleo. It's called the Primal Vixen Program and it's a 28 day program to unleash your inner sexy. Basically, it will cover EVERYTHING you need to hit the reset button on your health. Meal planning, group coaching calls, exercise programming, relationship and career work and loads more. I'll share all the goodies soon :).
I know it seems far away but the big launch will be in January to kick off 2015 with a bang. There will be a change to get involved earlier, the first of which is signing up for the email list to stay in loop as I put everything together. You can do that HERE.

- Core the apple and slice horizontally
- Pile up the ham on an apple slice
- Add the mustard
- Place another apple slice on top
Notes
I can usually eat two of these puppies. Feel free to add salad greens, different types of meat or tuna. Go cray!

Hi Kim! I’m a sucker for the house made black forest ham at whole foods. They don’t add any sugar! You could also use turkey from there as well. I think there is also a brand at trader joe’s that meets our requirements but I can’t remember! As far as I know all of the applegate ham has sugar added.
Oh DAMN these are good! The salty flavor of the ham, the sweet crunch of the apple, the zing of the mustard.. 3 great tastes that taste great together. Thank you thank you!
