Apple and Cinnamon Stuffed Pork Tenderloin with Almond Butter Sauce

Last night I made pork tenderloin (from Paleo Comfort Foods) with 2 different kinds of artichokes and it was delicious! This book is a must-have in my opinion. I modified this recipe a bit based on what I had in the kitchen.
Ingredients
- pork tenderloin - 2 pound
- cinnamon - 1/2 teaspoon
- raw honey - 1 tablespoon
- lemon zest - 1 teaspoon
- almond butter (the recipe called for their - 1/2 cup
- garlic, minced - 3 cloves
- hot water - 1/2 cup
- salt and pepper
Instructions
- Preheat the oven to 350.
- Butterfly and pound out the pork loin.
- Put the apples, cinnamon, lemon zest and honey in the food processor and pulse. Chunky is good.
- Pour over tenderloin and roll it up. Bake for 25 minutes a pound and let rest for 10 minutes.
- Mix the almond butter, garlic, salt & pepper and add the hot water to mix. It will look like a thick soup. Slice the pork and pour the sauce over and enjoy!!

OMGFG this was so delicious! Thank you Lauren for sharing this. We used butter in the nut sauce in place of the water. Cooked perfectly!

Oh my goodness….I just made a version of this and it was delish! Wish I would have read Casey’s comment about the butter instead of water…I totally would have done that! I did add some au jus from the tenderloin and came out nicely. I didn’t have two apples so I used one and threw in some of the golden raisin mix from Traders. It was delish! I’ll post pix on my blog so you can see.
