Prep tip!
If you love artichokes (they're my favorite, I'm getting a tattoo of one soon!), choose smaller ones with a large stem. This means they have a bigger "heart" (the yummy part!). You can cook 4 or 5 at a time and they're AMAZING for lunch leftovers if you cut them in half. Dip them in a home made vinaigrette! Don't forget to saw off the tops and cut the pokies off of each leaf, steam for 40 minutes! Enjoy!
