Paleo Grilled Albacore Tuna Salad

I made a salad last week for dinner that blew my britches off! I'm REALLY trying to eat more sustainable, local fish so I bought a really nice albacore tuna filet from my local fish market (Santa Barbara Fish Market) and it was super on sale! Did you know that you can cook albacore just like ahi? You can sear it so it's medium rare on the inside and it's SO good. It holds up really well on the grill and is amazingly flaky and sweet. I told my fish guy I wanted to do an ahi salad and he said do everything the same just try albacore, he prefers it over ahi and so do I now! So much yum.
This Paleo grilled albacore salad is awesome for hot summer nights when you don't want to heat up the house with the oven or the stove. It seriously really felt like summer when we ate this with hints of mango and lime. I can't wait for you to try it, definitely one for the "big ass dinner salad" books!
This salad is so perfect for a warm summer night! Keep the heat outside on the grill :)
Ingredients
- For the Dressing
- shallot or red onion - 2 tbsp, minced
- garlic - 2 cloves, minced
- lime - 1, juiced
- coconut aminos - 2 tbsp
- EVOO - 1/4 cup
- Salt and pepper
- For the Fish
- FRESH filet albacore tuna - 1.5 lb
- EVOO - 2 tbsp
- sesame seeds - 2 tbsp
- Salt and pepper
- For the Salad
- mixed salad greens - 2 heaping handfuls
- kale - 4 leaves, sliced
- nori seaweed - 1 sheet, torn or shredded
- carrots - 2, chopped
- green onion - 3 sprigs, chopped
- mango - 1, peeled and chopped
- micro greens or sprouts - 1/2 handful
- slivered almonds - 1/4 cup
- green apple - 1, diced
- bell pepper - 1, diced
Instructions
For the Dressing
- Whisk together all the ingredients except the EVOO and refrigerate until ready to serve.
- Add in the EVOO and whisk together, set aside.
For the Fish
- Fire up the grill to high heat
- Drizzle and rub the fish down with EVOO and add sesame seeds and salt and pep
- Grill for 7-8 minutes on each side for medium rare
- Cover in foil and set aside while you prep the salad
For the Salad
- Mix all the ingredients together in a large bowl, toss and chill until the fish is ready
- Toss in the dressing
- Slice the fish and place on top of the salad
- Serve and enjoy!
Notes
I got my fish from a local seafood market and it was extremely fresh and sushi grade. It was on sale so very reasonably priced! You can eat this kind of fish medium rare, just like you would Ahi tuna.
