Happy Tuesday Kiddos!

Thanks to Ms. Kelly Kirlin I tried a new way to cook a beautiful grass fed, big 'ol honkin rib eye! I honestly don't think that I've ever cooked a rib eye anywhere else than the grill! Low and behold this recipe where you broil it, then you top it with a parsley, garlic and lemon schmear. DING, gorgeous.

In between this and the recipe I must tell you that I linked 2 kipping pull ups today!!!!!!!!! It's needless to say that I've never done a kip before so I'm kinda freaking out. My Mommie thinks I'm hard on myself and that I'm perfect (thank you mommie, I love you) but I feel like if I didn't set these goals for myself I wouldn't be able to accomplish them, let alone have a benchmark to compare things to as I make progress. She said something that really resignated with me and I think I said something that did the same for her. She said "you know honey, I can' t help but think life is short and you can't beat yourself up for indulging." I said to her, "I totally agree but the feeling of accomplishing a goal and reflecting upon my success is just as sweet." I'm sure we've collectively found some dichotomy/balance between feel-good and discipline. As we journey down the road to becoming healthier people, we can't abandon the actual journey and must not forget to smell the flowers (or taste the cheeseball). As Jim Rohn so eloquently states, it's all about lifestyle. When you have a choice to tip 5 dollars or 10, choose 10 as it will make you feel so much better that tipping 5, you'll basque in the glory of your lifestyle. I like that, a lot..... Just as having a weekend full of friends and love and eclairs cannot trump the amazingness of the lifestyle you're living as you relax in the evening sun, surrounded by loved ones (and then you play catch phrase so hard, you literally scream profanity and toss the device at their heads).

N-E-WAYZZZ, thanks for hearing me out there. SO- My kip pull ups were my goal for JULY!!!! Another amazing feat that happened today is that I completed "The Art of Exceptional Living" series by Jim Rohn. And you know what I did?! I finished disc 6 and I immediately put in disc 1 again. I HIGHLY recommend listening to this series. Seriously, a life changer!!!!!

Back to the recipe, I feel like the dude on the cooking channel wasn't talking about the behemoth of a steak that I had because I literally had to cook is 4x as long as he said. So here is my adapted recipe with an almost 2 inch thick bomb-daddy rib eye :).

Schmear for the Rib Eye:

Get It:

  • 1 head of garlic, chopped and sauteed
  • 1 lemon, juiced zested
  • 1/2 cup chopped parsley
  • 3 tsbp EVOO

Do It:

  • Sautee garlic and parsley in a pan for about 10 minutes and add the lemon, set aside.

Broiled Rib Eye:

Get It:

  • 2 tbsp butter
  • 1 LARGE ASS RIBEYE STEAK

Do It:

  • Preheat the oven to broil.
  • Melt the butter in the skillet or stainless pan and brown for 5 minutes on each side.
  • Place pan and all in the oven for 10 minutes each side.
  • For a medium steak it should be as tender as the soft part of your hand by your thumb.
  • The original recipe said to just broil it for 4 minutes each side.
  • When I pulled it out it was MOOING so trust me, let it cook for this amount of time, take it out and let it rest for 10 minutes and THEN check the doneness and then add the schmear on top.
  • You may very well need to throw it in for another 10 minutes to make it a solid medium.
