Happy Hump Day Lovelies! (Didn't post yesterday due to miss Kelly's birthday party!)
I had a great time in the kitchen last night. Partly because of the champagne, partly because I was cooking a heart warming meal for the man that warms my heart! Paleo shepherds pie and Paleo cookies (for a V-day treat).
Paleo Shepherds Pie:
2 lbs ground grassfed beef
1lb ground pork
1 large white onion
2 cups shredded carrots
2 cups green peas
1 cup pearl onions
5 cloves garlic, crushed
2 medium sweet potatoes or 3 cups mashed cauliflower
3tbs ghee
Large pinch of chopped tarragon
1tsbp coconut oil
Preheat the oven to 375. Brown the beef in coconut oil and add the garlic, onions, tarragon, carrots and peas. Boil the potatoes for about 20 minutes or until very soft and mashable. Mix with 1/2 of the butter in with the sweet potatoes. Place the beef in a baking dish and top with the potatoes. Then top with thin slices of the remaining butter. Bake for 40 minutes.

hehe, yummy champagne from my wonderful hubby And cinnamon, and a twist tie. Whatever...
COOOOKIES!!:
2 cups almond flour/meal
1/2 cup pecans
1/2 cup carob chips
2 splashes coconut milk
pinch of salt
2 eggs
Splash of vanilla extract
Sprinkle of cinnamon
Mix all the ingredients together and place on parchment paper. Bake for 20 minutes at 350 degrees. You can also dip them in coconut milk. BOOM
