Happy Friday Love Muffins!

I'm so excited that I've made it through week one of the 21 day sugar detox and I SWEAR I can already see my tummy getting slimmer.  I got in 2 WOD's this week at 2 different box's (next week will be 3 and then I'll be back up to my normal 4 the following week) and I'm feeling pretty spectacular. Jer and I have decided to join up with Crossfit Pandora's Box! We sampled a couple of other spots but really like the trainers, their attention to detail and the warm welcome we both got here.  Choosing a box is like joining a new family so we're super stoked :)

Back to feeling spectacular- this is true but to be honest, I literally think I had a physical reaction to no sugar! Even though I barely eat it, I do eat a lot of fruit and drink a lot of juice.  I had a full blown cry fest Wednesday night! I know that I'm adjusting to my new environment and I'll be going through some changes but I LOST.....MY.....SHIT.  Thanks goodness for the hubby that allowed me to curl up in a ball in his lap and convulse crying for about an hour.  Then, the Smurf's movie came on and I drifted off into a snot induced slumber.  Also, Jer and I have been having some cramp type issues- we call them "poo poo pains" lol, this has to be part of the process.  SUGAR IS WHITE DEATH PEOPLE! Ditch it! I can't wait to share my pics and results with you when we make it!

In other news, we're signed up with a new chiropractor! I'll be a new patient at 100% Chiropractic in Colorado Springs.  If you all are curious about how wellness chiropractic can help you check this out!  I will never in my life not have a chiropractor, nor will my hubby, nor will my children (that are just twinkles in their Daddy's eye currently). Yeah, it's like that.

Okay now for the shite you've all been waiting for! FOOOOOOD.  Here are the major meals for Day 1.   I'm not posting about snacks, but you can usually find me grazing in between meals, with the fridge wide open on saurkraut, bacon, almonds, carrots dipped in almond butter, spicy pickles and tuna from the can :).  Stay tuned for the rest of the meals for the week- they're all photographed and excited for you to see them!

Breakfast Day 1:

Leftover Tarragon Chicken, fried egg and avocado bowl (plus green Tobasco- If you haven't heard I'm OBSESSED)

 

Perfect Turkey Meatballs

Get It:

  • 1/2 lb ground turkey thighs (free range, organic)
  • 1/2 lb pork breakfast sausage from the butcher (just make sure there's NO sugar!)
  • 1/2 white onion
  • 1 egg
  • 1 cup San Marzano diced tomatoes
  • Salt and pepp

Do It:

  • Preheat the oven to 375.
  • Mix all the ingredients in a bowl WITH YOUR HANDS!
  • Be careful to not play with your meat too much lol.
  • Mold them into whatever size balls you like (sorry I had to).
  • Place them evenly out on a baking dish, close but not touching.
  • Bake for 25 minutes.
  • Serve over a dollop of the warm tomato sauce (there's no sugar, don't worry).

 

Unconventional Parsley Salad

Get It:

  • 2 bunches parsley
  • 2 cloves garlic
  • 2 lemons juices
  • 1/4 cup EVOO
  • 1/4 cup pine nuts
  • Salt and pep

Do It:

  • Massage the parsley with about 1/2 of the EVOO and some salt in a medium sized bowl.
  • Saute the garlic in a small pan on medium low until slightly crunchy.
  • Combine all the ingredients together in the bowl.
  • Finish with some more salt and pep and serve chilled.

 

 

 

Crunchy Leek and Garlic Broccoli

Get It:

  • 1 bunch broccoli
  • 4 cloves garlic
  • 1/2 cup sliced leeks
  • 2 tbsp ghee

Do It:

  • Sauté the garlic and leeks in the butter on LOW heat for about 15 minutes.
  • Once they look happy crank up the heat to medium and add the broccoli.
  • Cover and stir occasionally for about 15 minutes or until broccoli is tender.
  • I really like the crunch of this dish, I left the broccoli really al dente.
