Don't throw away the leaves on celery! Save them to make celery flakes.
Simply wash and dry the leaves well, place in oven at 200 degrees for 2.5 hours. Make sure they're crunchy and crumble them with your fingers.
Save them in an empty spice container. Delicious on all kinds of dishes!
