Spectacular Paleo Lasagna

Got a banging new recipe for you! I'll get straight to the point and say this is by far one of my best recipes to date *dismounts soap box*. Super simple lasagna with quality ingredients makes this recipe a "husband favorite!" Simple, fresh ingredients, a little technique and you'll swear this Paleo lasagna is better than the pasta version.
There is a little dairy in this because I couldn't stand not using my raw, grass fed parmesan cheese. Just omit if you're sensitive to dairy and swap butter for ghee on the top layer of zucchini :). Ingredients
- white onion - 1, sliced
- garlic - 4 cloves, minced
- EVOO - 3 tbsp
- medium zucchini - 4
- grass fed ground beef - 2 lbs
- raw sweet Italian sausages - 5, casings removed, I got mine from Trader Joe's
- tomato sauce - 1/2 small can
- crushed tomatoes - 1 large can
- Everyday Seasoning from Trader Joe's - 2 tbsp
- fresh thyme - 1 tbsp, chopped
- fresh oregano - 1 tbsp, chopped
- grass fed parm - 1/2 cup (OPTIONAL)
- butter or ghee - 3 tbsp
- salt and pepper
Instructions
- Preheat the oven to 350.
- Wash the zucchini and slice vertically into thin strips, set aside.
- In a large saucepan heat the to medium heatEVOO and add the garlic, onion and everyday seasoning.
- Saute for 10 minutes or until the onions are translucent.
- Add the sausage and beef and brown for another 10 minutes. Drain the fat (*see note below). Add the herbs.
- Add the crushed tomatoes and tomato sauce.
- In a large baking dish, line the bottom with one layer of zucchini, add a layer of the meat sauce.
- Repeat this step and finish with a layer of zucchini on the top.
- Add some salt and pepper, a little more everyday seasoning and butter or ghee slices on top.
- Bake for 20 minutes, add the parm (optional) and finish for another 10.

Hey love! One other good tip to help with consistency is to cook the zucchini before layering to get out some of the moisture (and then maybe you can keep the good fat). Thanks for the recipe–got me excited for fall cooking!!
