Whole Roasted Curried Cauliflower

Talk about easy and delicious, this cauliflower is the ultimate week night side dish. This whole roasted cauliflower can be portable for lunches or you can eat the whole damn thing in one sitting (no... (yes), that's not what I'm saying I did). There's something so dramatic and perfect about the curry and cauliflower duo. It's like,two things were never meant to be together more! So here we go, pop it in the oven, and chow.

Ingredients
- cauliflower - one head
- EVOO or fat of choice - 1/4 cup
- curry powder - 1 tbsp
- dried tarragon - 1 tbsp
- sesame seeds - 1 tbsp
- salt and pepper
Instructions
- Preheat the oven to 400
- Trim the stalk of the cauliflower head so it will sit flat on a baking sheet
- Drizzle with EVOO
- Season with curry powder and salt and pep
- Bake for 40 minutes
- Let it cool before you go crazy
Notes
Cut it into quarters, in half or just break off florets with your fingers!
