Zippy Stuffed Zucchini
This dish is super easy and definitely heart warming.
Simply Paleo Tip-I used the same meat mix for my turkey and sausage meatballs. Just buy a pound of each and split them up before you put it in the freezer. :)
Ingredients
- 4 large zuccini
- ground turkey - 1/2 lb
- ground pork sausage - 1/2 lb
- 5 mushrooms
- leeks - 1/4 cup, chopped
- EVOO or coconut oil - 1 tbsp
- 3 cloves garlic
- 4 slices bacon-cooked
Instructions
- Preheat the oven to 375 and add the zucchini.
- Cut the zucchini longways and hollow it out with a spoon.
- Chop up the shrooms, leeks, garlic and the bacon.
- Sautee the leeks, garlic and shrooms in the EVOO for about 5 minutes and add all the other ingredients. Cook until browned.
- Pull the zucchini out of the oven and add the filling.
- Bake for about 20 minutes and enjoy! I served with micro greens because they looked pretty :).

Breakfast:
2 fried eggs, sourkraut and green Tobasco (duh)
A tip on perfect fried eggs. Use ghee for higher heat tolerance than butter and use a higher heat. This results in nice brown crunchy on the bottom. Cook on the other side for just 10 seconds so you still get a good over medium
The saurkraut is from Whole Foods and the brand is Farmhouse Culture, it live kraut if super rich in probiotics. I LOVE the leek and horseradish flavor!
For Lunch:
Leftover turkey meatballs with sliced avocado and salsa, and green Tobasco lol.
