Yeah, yeah I know my alliteration gets old but deal with it :).   I whipped up a little dish that was for sure a crowd pleaser and was obviously SIMPLE!

Carrot Kale and Bacon Saute

Get It:

  • 1 head organic Kale
  • 1/2 lb bakon (:)) cooked
  • 4 medium size karrots
  • 3 tbsp coconut oil
  • 5 cloves crushed garlic
  • 1 small leek onion, chopped

Do It:

  • Boil some salted water and either steam or boil the carrots for about 10 minutes or until tender.
  • While the carrots are cooking prep your Kale.
  • Grab the stem and pull away from your hand removing the thick part of the stem, give it a wash and set aside.
  • Melt the coconut oil in a large saucepan and add the garlic and leeks.
  • Sautee for about 5 minutes to soften.
  • Add the Kale and sautee for 5 minutes.
  • Add the bakon and carrots, toss together and serve!
