Okay so this dish consists of bacon wrapped filet with a red wine butter reduction sauce, shrimp scampi and an artichoke with ghee.
Start the Artichoke first
Bacon Wrapped Filet Mignon
Get It:
- 2 grass fed filets
- 2 strips bacon, thick cut (nitrate and nitrite free)
- 3 tbsp EVOO
- 2 toothpicks
Do It:
- Preheat your oven to 500 degrees and while it's heating up, place an oven safe pan inside. I used my stainless but a cast iron skillet would be great too.
- Next dry off your filets (rinse if they're in a lot of liquid, then dry) with a paper towel or cloth. Make sure they're DRY!
- Wrap with the bacon around the edge and fasten with a tooth pick along the side.
- Pull the pan (with oven mitt, VERY HOT) out of the oven and place on the stove at high heat.
- Add the EVOO and the filets.
- Brown them for 5 minutes on one side without touching them and do the same thing on the other side.
- Pop them back into the oven for about 7 minutes depending on thickness).
- Place in a dish and cover with foil for 10 minutes, the temp will raise 5-10 degrees after you remove it from the oven.
Temps:
- Rare- 120 degrees
- Medium Rare- 125 degrees
- Medium- 130 degrees
Shrimp Scampi
Get It:
- 16 shrimp
- 3 tbsp butter
- 6 cloves garlic
- 1 tbsp chopped parsley
Do It:
- While your filets are in the oven, melt the butter and toss in the garlic on low heat.
- BUTTER AND GARLIC WILL BURN- so use your damn knobs as Emeril would say!
- Toss in the shrimp and sautee for about 10 minutes or until they're pink.
- Sprinkle with parsley.
Red Wine Butter Reduction:
Get It:
- 1/2 cup wine
- 2 tbsp butter
Do It:
- In the same pan you cooked the filets in add the wine and bring to a boil.
- Let it reduce for about 5 minutes.
- Add the butter and when it's melted, spoon over the filets. Oh....em....geee.
Plate up and you're sure to have a happy hubby or buddy!
