Cream of Broccoli Soup with Bacon

Hope you had a good day yesterday! I sure did, I PR'd my 100 double unders for time! 1:53! My goal for so long has been to get sub 2 minutes. Now we're on to sub 1:30. I expect people to think I was beaten with all the whip marks on my ass. Totally worth it! So this recipe is a spin on Nom Nom Paleo's Curried Cream of Broccoli Soup. I gotta give credit because she's pretty much my idol. I dropped the curry, added some green onion and a few spices and BACON!
Ingredients
- broccoli, chopped up and use the stems (just cut the outer layer off) - 1 head
- large onion - chopped - 1
- coconut oil - 2 tbsp
- garlic - finely chopped - 2 cloves
- green onion - chopped - 2 stalks
- chicken broth (mine was homemade, wahoo for frozen prep stuff!) - 1 quart
- ghee - 2 tbsp
- Dash cayenne and mustard power
- coconut milk - 1 cup
- Salt and pep to taste
- bacon - chopped - 4 slices
- Sprig of fresh parsley - chopped for garnish
Instructions
- Add the onion and coconut oil into a stock pot on medium for 15 minutes to caramelize.
- Add the green onion, garlic, broccoli, ghee, cayenne, mustard powder, salt and pep and broth- bring to a boil.
- Simmer for 20 minutes on medium low- covered.
- Turn the heat off and use an immersion blender or regular blender and blend together (that's a lot of blends!).
- Add the coconut milk and stir - see if it need a little salt and pep.
- Spoon into a bowl, sprinkle with bacon, serve and watch your eyes pop open with delight.
