I owe you one!

Due to some VERY important social obligations last night I didn't send you a post! I'll add one on for Saturday!! Okay, another issue. I know I keep telling you that I'm going to make the Thai curry dish and I STILL haven't made it! It is coming, I promise and it will be the best damn curry recipe you've ever seen!
Ingredients
- grass fed ground beef - 1 lb
- ground turkey or pork - 1 lb
- large onion - 1
- cloves garlic - 8
- EVOO - 3 tsbp
- salt and pepper
- San Marzano crushed tomatoes - 1 can
- Dash of paprika
- bay leaves - 2
Instructions
Spaghetti Squash:
- Preheat the oven to 375
- Microwave them whole for about 5 minutes so you can actually cut them in half longways and scoop out the seeds.
- Bake for about 40 minutes face down, in a glass baking dish with about an inch of water.
- I had 2 smaller ones but you can do the same with 1 large one.
- You can also microwave them for about 8 minutes in the same dish. If you have the time, I feel like it turns out a little better in the oven.
Amazing Meat Sauce:
- Sauté the onions and garlic in EVOO, add the spices and the meat and brown.
- After that’s done, add a whole can of San Marzano tomatoes and let it simmer for about 30 minutes and voila!!
- Fluff up your spaghetti squash with a fork, put the meat sauce on top and serve.

Haha it turns out like spaghetti noodles!! Tender and stringy! If you want to eat them plain with butter and salt and pepper they’re delicious that way too!
It just turns into ‘noodles’! It’s weirdly awesome.
