Kicked Up Sausage Skillet
Happy Tuesday Lover Heads!
I got so excited about the dinner I whipped up tonight I decided to post right away. Truly a hug in a bowl that will kick you in the ass with some spice! Well not truly, a bowl can't actually hug you or kick your ass, that'd be weird. Anyway, let's get right to it, I'm not feeling very word-y today haha!
This is my favorite Monday recipe!
Ingredients
- spicy pork sausages (raw) - 4
- garlic - 3 large cloves, diced
- white onion - 1/2, chopped
- green bell pepper - 1, sliced
- yellow bell pepper - 1, sliced
- package button or Crimini shrooms - quartered
- jalapeño - 1, diced- if you don't like it spicy, omit this or just use 1/2
- red pepper flakes - 1 tsp
- coconut oil - 3 tbsp
- Salt and Pep
- A few chopped basil leaves for garnish (optional)
Instructions
- Preheat the oven to 375
- Brown the sausage in 1 tbsp coconut oil in a cast iron skillet or stainless pan. 6 minutes each side and set aside (don't worry if its not all the way cooked, we bake next!)
- Add a bit more fat into the same pan, this time I used 2 tbsp grass fed tallow, ghee is good too
- Add the onions, shallots and jalapeños and red pepper flakes and brown for about 10 minutes
- Add the peppers, shrooms and garlic
- Cut the sausages into 3rds and add them back to the skillet
- Bake for 40 minutes
- Serve in a large personal bowl and garnish with salt and pep and basil
