Kick the Sick Paleo Chicken Soup
Happy Thursday Friends!
A couple weeks back, I was feeling like I was catching a cold. Wah, wah, wah. Since you and I both know food is the best form of medicine, I naturally headed straight to the farmers market to make a feel-good soup with tons of veggies. I totally kicked the sick and I think this soup had a lot to do with it :). You'll also notice in the photo below I had some kombucha and counter attack. 70% of our immune system is in our gut so kombucha is always a good bet. Counter attack is kind of like a safety net. It's just vitamins and minerals that can help boost your immune system. Be prepared for radioactive color pee though, lol.
There are 3 different ways to make my Kick-the-Sick Paleo Chicken Soup:
- In a dutch oven or large pot on the stove.
- In a dutch oven in the oven
- Crock pot
Nourish your body with this amazing one pot soup!
Ingredients
- organic, free range, boneless skinless thighs - 2-3 lbs
- broccoli - 1 head, de-stemmed and broken into bite size florets
- zucchini - 2, sliced
- green beans - 1/2 lb, de-veined and cut in half
- green cabbage (small) - 1 head, sliced
- leeks - 1/2 cup, chopped
- white onion - 1, chopped
- carrots - 8, 1 in rounds
- stalks celery - 4 stalks, chopped
- head kale - 1 head, de-stemmed and sliced
- bay leaves - 2
- coconut oil - 2 tbsp
- organic, diced tomatoes - 1 can
- garlic - 6 cloves, minced
- organic, free range chicken broth (I had homemade broth in the freezer but store bought is okay too) - 1 qt
- small red potatoes (OPTIONAL) - 5, quartered
- salt and pper
Instructions
- Melt the coconut oil to a large pot or dutch oven.
- Add the sliced chicken thighs and brown over medium heat (5 mins).
- Literally, toss everything else into the dutch oven except for the kale.
- Make sure that all the soup ingredients are covered with broth, you can add water if you need to.
- Bring to a boil, cover and reduce heat to low for at least 2 hours.
- When there's 15 minutes left, add the kale to soften and add some salt and pep to taste.
- Serve and say goodbye to the sick!
Notes
Feel free to add any fresh herbs or spices that tickle your fancy. I think I added oregano and thyme from the garden but I don't remember haha!

This was delicious! My only regret is that I didn’t add more chicken. It was the perfect answer to what to do with our CSA veggies. Sometimes we have so many veggies that I get cooking paralysis. This was a delicious solution. Thank you!
