Cavegirl Cuisine's Honey Lime Salmon
It's Hump Day, it's Hump Day!
Well, I'm not sure if you heard but Michelle from Cavegirl Cuisine and I are pretty much best friends. Eh, that might be a little stretch, we've actually only spoken on the phone and via email but whatever, same thing. I love her. I love her recipes, I love her consistency! I swear, every day she's got a new and totally creative recipe so it's only natural that she's just come out with a killer Paleo cookbook. It's called "Cavegirl Cuisine- Eating Paleo...One Bone at a Time" and it's just lovely! Just so you guys don't think I'm shamelessly doing a product plug, I frequently turn down cookbook reviews, this one made the cut by a landslide! Why I LOVE Cavegirl Cuisine's New Cookbook:
- Creative - there combinations of ingredients that I would never think to put together on my own! Like the Salsa Verde Meatballs! I make meatballs, and I make chile verde but who woulda thought they would be so delicious together!? Brilliant. That's just ONE example!
- Organized - I love the layout of the book. By land, by sea, soups and stews etc. Great for quick references and easily visible, colored sections.
- Easy to Find Ingredients - There's no crazy spices found only in India or fish that would only be available if you were an Alaskan bushman. All of the ingredients are just a stone's throw away at your local grocery store or farmer's market.
- Approachable - Michelle did all the photography on her own and I really appreciate the fact that it's not some leather bound, 400 page pretentious cookbook. Cookbooks should be used and loved and should make you feel empowered in the kitchen, not intimidated! They're meant to get dirty and spilled on. Her simple design with lovely photos and a paperback cover really say "use me."
- Delicious - Every recipe I've made so far has really knocked my socks off. Sometimes, I don't even want to tell my husband that it's not my recipe lol. Gotta give credit where credit is due though.
MUST TRY: Chile Verde Meatballs, Bacon Wrapped- Chorizo Stuffed Dates, Asparagus Casserole.
I decided that I don't have enough fish on Simply Paleo so I wanted to made Cavegirl's Honey Lime Salmon. I grilled it instead of baking it and it came out so good! The ingredients are simple but not ones that I would ever thing to put on a salmon fillet. My husband is just "meh" about fish and he really enjoyed this recipe :). If you'd like to bake it, it just takes 12-15 minutes at 350. SO SIMPLE!
I also threw a few cherry tomatoes on the grill with the salmon and did a really simple sautéed spinach on the side. Get ready for the perfect summer dinner!

Ingredients
- wild-caught salmon filet - 1.5 lb, (cook more if you want)
- raw honey - 1 tbsp per filet
- fresh lime slices per filet - 2
- Sea salt
Instructions
- Preheat the grill, mine was at about 400
- Brush fillets with honey
- Season with salt
- Place 2-3 lime slices on each filet
- Grill until desired doneness, about 12 minutes per side.
- The cooking time will vary with the thickness of the filet.
- Do not overcook!
Notes
If you want to get technical, you can use a meat thermometer and google the perfect temp for your desired doneness :).
