Not Too Sweet Paleo Lemon Bars!

We made it through Thanksgiving! If you're like me you may be licking your wounds a bit. I'm currently in Mississippi and Thanksgiving here is serious business, delicious business. I made fairly good choices but it definitely wasn't a Paleo thanksgiving. It's really hard to say no to this food, you can't get it anywhere else in the world and to say it's a treat is an understatement!
Here's recipe for Lemon Bars that I modified from I Love Feta Cheese. Check out her site and like her on FB, she's a doll! We had these the day before Thanksgiving after a lovely Paleo dinner. Preparation for the storm if you will.
Ingredients
- Paleo Lemon Bar Crust
- almond flour - 1/2 cup
- coconut flour - 1/2 cup
- coconut oil (melted) - 2 teaspoons
- egg - 1
- cinnamon - 1 teaspoon
- clove - 1 teaspoon
- vanilla - 1 teaspoon
- Paleo Lemon Bar Filling
- eggs - 4
- raw honey - 2 tbsp
- Meyer lemon juice - 3/4 cup
- vanilla extract - 1 tsp
- Handful Shredded coconut
Instructions
Paleo Lemon Bar Crust
- Preheat the oven to 350 degrees.
- In a large bowl, mix all the ingredients together and scoop out into a glass baking dish (I used a square 8×8-ish).
- Press out with your fingers so it covers the whole bottom.
Paleo Lemon Bar Filling
- Mix all of these ingredients together and pour over the crust.
- Simply bake this for 15 minutes at 350.
- Don't overcook it or it will dry out, the mixture will set as it cools.
- Sprinkle the coconut over the top and let it cool for about and hour, cut into squares and enjoy!

Sounds delicious … but do you put the coconut in before baking, or sprinkle it on after taking it out of the oven and letting it cool? I don’t want to screw it up!!

I put it in before I baked
I’m going to try these again without the cloves. That was just way too strong and I didn’t even finish a bar. Otherwise the consistency and everything was good. I think they’ll be winners w/o the cloves. Thanks.
