Roasted Garlic Mashed Cauliflower
Creamy, garlicy and fabulous!
Ingredients
- cauliflower - 1 head
- ghee - 3 tbsp
- roasted garlic - 5 cloves
- salt and pepper
Instructions
For the Garlic
- A day ahead of time, roast the garlic. Cut off the top so most of the cloves are exposed.
- Drizzle with EVOO and S&P, wrap in foil and place in a glass baking dish.
- Bake at 400 for 40 minutes, check with a fork to make sure they're tender.
For the Cauliflower
- While the tri tip is in the oven, add 2 inches of water to a large pot and bring to a boil
- Place a steamer basket with cauliflower florets in.
- Cover and steam for 15 minutes until tender.
- Place in a food processor with the ghee, garlic and salt and pep and whip until creamy.
Notes
Roast 4 or 5 heads of garlic ahead of time and freeze them!
