Use a "Mirepoix" (mi-re-puah) as a starter for stocks, soups, stews and sauces. Also called the trinity, these finely chopped veggies-celery, carrot and onion make up the perfect base. Sautee with with a little EVOO and you're sure to have a perfect dish! (Thank you for the idea sweet Mommie!)
