Paleo Coconut Balls
Happy Monday Fellow Followers!
I've got a few deliverables today so stick with me as I bounce around!
First off, the winner of the Primal Blueprint Cookbook is CHRIS KNAPP!! Out of the 2 qualified entry comments (see your odds there!?) I entered them into an excel file and randomized them. The one on top was the winner and it was Chris! Congratulations and thanks for consistently reading!! Your book will be here in 3 or so days, I'll bring it to boot camp.
Next on the agenda is to share some struggles. Hey, we've all got them right? This weekend was an eventful one and I'd be bold faced lying if I said I did a good job sticking Paleo. I did a BAD, BAD job. Last night, I was beating myself up and wallowing in my post face-stuffing gluten, sugar, alcohol bender. This morning, thanks to a sweet comments on my FB and some encouraging words from my awesome husband I'm feeling a little better mentally.
Like GET OVER IT, move forward and focus on making better decisions next time. Also, between the tri tip sandwich slathered with white gold, chocolate eclairs, Vira's famous cheeseball and crackers, potatoes and corn I can honestly say I really enjoyed myself and all of it was down right DELICIOUS.
So now that I feel kinda poopy today I'm gonna drag my ass to the gym tonight, make a delicious dinner and reflect upon the fact that I had an amazing weekend with all of my amazing friends. Life is here to live right???
BUT "discipline is the bridge between goals and accomplishment" says Mr. Rohn.
Justification aside, I have goals that I've set for myself that need accomplishing. Those goals include 6 pack abs, a sub 20% body fat percentage and an unassisted dead hang pull-up by the end of the year (among several other things but you get it).
So what will I do to accomplish these goals in light of my recent eff ups? Move forward, no looking back. And I've documented in my brain (and blog) how crappy I felt about myself when I made those decisions.
I've noticed that I've started slacking on my blog posts. And I know exactly why!!! My goal that I set for myself has expired. Such an interesting correlation to think about. I set goals for myself, I accomplish them. I don't have a goal set, I don't accomplish anything. Think of all of the things that I could have set goals for in the past and just never did so!

MY BLOG GOAL:
For the next 4 weeks I will consistently post each weekday (ending on Friday, March 23rd)
If I accomplish this, I will get a full body massage.
If I do not accomplish this, I will not have the cleaning lady come for 1 month.
WORK HABITS GOAL:
I will have a stand up workstation by the end of March 2012. I will walk around the block once before lunch and once after lunch everyday for the next 2 weeks. I will make a to-do list at the end of the day for the next day for the next 2 weeks.
If I accomplish these, I will buy a lulu tank.
If I do not accomplish these, I will give Jeremy a 1.2 hour foot massage.
Okay, now for some food stuff, the good stuff!! I made PALEO TREATS! They turned out great!
Tomorrow's recipes should be interesting. I'm cleaning out the fridge tonight and I decided that I'm gonna show you what deliciousness you can create with paprika. I've got my meals planned out for the week but I figure I'd get everything out of the fridge before I stock up.
I tend to go grocery shopping before I'm really "out" of food you know? It can be wasteful sometimes because you get all excited about your new organic, grassfed, free range yummalicious loot and you may forget about the veggie that only has a couple days until it's gone by.
Ingredients
- coconut flour - 2 cups
- almond meal - 1/2 cup
- eggs - 3
- dark chocolate chips - 1/4 cup
- 85% cacao powder, chopped - 2 tbsp
- vanilla - 1 tbsp
- pinch of salt
Instructions
- Preheat the oven to 375.
- Make sure the texture is dry enough to make little balls.
- Add wet ingredients and whisk together, add the chocolate and then add the flour.
- Mix with your hands so you can get a feel for the texture and if it will form and hold shape.
- Mold balls and placed on a greased baking sheet.
- Bake for 15-17 minutes.
- They’ll be nice and brown and the chocolate will be shiny when they’re done. Sorry for the shite photo, this is pre-oven.

Hi Lauren…I just found your site and it looks wonderful! I have a sweet tooth and love new paleo recipes, but do not like using honey, maple syrup, dates, etc. I love that your recipes are not big on this. I just want to clarify one thing on this…do we really use 2 cups coconut flour and only 2 eggs?! Did you mean 2Tbs? Look forward to making these
Hi Jen! So glad you found me and I appreciate the comment! It is indeed 2 cups of coconut flour. It makes up the bulk of the recipe since there’s no icky white flour
Wow! Interesting. I have been low-carb for over a year now and have not seen any recipes with this much…but I am definitely going to give these a go Thank you! When I make them I will let you know how they go. Thanks for getting back.
